Starts machine, observes tachometer, and adjusts controls to regulate speed. Starts pumps, turns valves, and observes gauges to convey wort through machine at specified pressure. Regulates clarity of wort by observing color and turning valves to alter pressure flow. Removes solids from machine with wooden paddle. Cleans machine with water.
